1. Prepare the oven
Preheat your oven to 350°F (175°C).
Lightly grease a 9×5-inch loaf pan, or line it with parchment paper.
2. Mash the bananas
Place the ripe bananas in a large bowl and mash them with a fork until mostly smooth.
3. Mix the wet ingredients
Add the eggs, applesauce, melted butter, vanilla, and sugar.
Whisk until everything is well combined.
4. Combine the dry ingredients
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
5. Make the batter
Gradually add the dry ingredients to the banana mixture.
Stir gently just until combined. Do not overmix, as this can make the bread dense.
Fold in the chopped walnuts.
6. Fill the pan
Pour the batter into the prepared loaf pan and spread the top evenly.
For extra crunch, sprinkle a few additional chopped walnuts over the top.
7. Bake
Bake for approximately 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
If the top becomes too dark before the center is finished, loosely cover it with foil.
8. Cool
Allow the banana bread to cool in the pan for 10–15 minutes.
Remove it from the pan and place it on a wire rack to cool completely before slicing.
