1. Make the steak mixture
In a large bowl, combine the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Mix gently until everything is well combined.
2. Shape the patties
Divide the mixture into 4–5 portions and shape each one into an oval-shaped patty about ½–¾ inch thick.
3. Brown the steaks
Heat a large skillet over medium-high heat and add a little oil. Place the patties in the skillet and cook for about 3–4 minutes per side, until nicely browned. They don’t need to be completely cooked through yet. Remove them and set aside.
4. Cook the onions and mushrooms
Reduce the heat to medium. Add the butter to the same skillet, then add the sliced onions and mushrooms. Cook for 5–7 minutes, stirring occasionally, until softened and lightly browned.
5. Make the gravy
Sprinkle the flour over the onions and mushrooms. Stir constantly for about 1 minute to cook the flour.
Slowly pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce and thyme.
6. Return the steaks
Place the browned Salisbury steaks back into the gravy. Spoon some of the sauce over the top.
7. Simmer
Cover and simmer over low heat for approximately 10–15 minutes, or until the patties are cooked through and the gravy has thickened.
For ground beef, cook to an internal temperature of 160°F (71°C).
8. Season and serve
Taste the gravy and adjust the salt and pepper. Serve the Salisbury steaks generously covered with the mushroom-onion gravy.
