1. Add the ingredients
Place the rolled oats, cottage cheese, eggs, baking powder, vanilla, maple syrup, cinnamon, and salt into a blender.
2. Blend
Blend for 30β60 seconds, until the mixture becomes mostly smooth and creamy.
If the batter is too thick, add 1 tablespoon of milk at a time until it reaches a thick but pourable consistency.
3. Rest the batter
Let the batter rest for 5 minutes. This gives the oats time to absorb some of the moisture and helps create thicker pancakes.
4. Heat the pan
Place a nonstick skillet or griddle over medium-low heat.
Lightly grease it with butter or a little cooking oil.
5. Cook the pancakes
Pour about ΒΌ cup of batter onto the skillet for each pancake.
Cook for about 2β3 minutes, until bubbles appear on the surface and the edges begin to look set.
6. Flip
Carefully flip each pancake and cook for another 1β2 minutes, until golden brown and cooked through.
Repeat with the remaining batter.
7. Stack and serve
Stack the warm pancakes on a plate.
Top with a small pat of butter and drizzle generously with maple syrup.
Add berries, banana, or a sprinkle of cinnamon if desired.
