Easy Chocolate Peanut Butter Crunch Bars

Line a 9 × 13-inch baking pan with parchment paper, leaving some paper hanging over the sides.

This makes it much easier to lift the finished bars from the pan before cutting.

Step 2: Make the Peanut Butter Mixture

Place the butter, brown sugar, honey, and peanut butter in a saucepan over medium-low heat.

Stir constantly until the butter has melted and the mixture becomes smooth.

Do not let it boil vigorously. You simply want everything melted together and creamy.

Remove the saucepan from the heat and stir in the vanilla and salt.

Step 3: Add the Oats

Add the rolled oats to the warm peanut butter mixture.

Stir thoroughly until every oat is coated.

Pour the mixture into the prepared pan and press it down firmly into an even layer.

Use the back of a spoon or the bottom of a measuring cup to compact the mixture.

Step 4: Prepare the Chocolate

Place the milk chocolate chips and semi-sweet chocolate chips in a microwave-safe bowl.

Heat in short 20–30 second intervals, stirring well after each interval, until completely smooth.

Stir in the tablespoon of peanut butter for an extra creamy chocolate topping.

Step 5: Add the Topping

Pour the melted chocolate over the oat mixture.

Spread it evenly from corner to corner.

If desired, sprinkle chopped peanuts over the chocolate while it is still soft.

Step 6: Chill

Place the pan in the refrigerator for at least 2 hours, or until the chocolate and base have completely set.

For cleaner slices, you can chill it overnight.

Step 7: Cut Into Bars

Lift the entire slab from the pan using the parchment paper.

Place it on a cutting board and cut into small squares or bars.

For holiday cookie trays, smaller pieces work especially well because these bars are rich and satisfying.

A Perfect Christmas Treat

The best thing about these bars is how easy they are to make in large quantities. You can prepare several pans at once, let them chill, and then cut everything into bite-sized pieces.

The soft, chewy peanut butter-oat base paired with the smooth chocolate topping makes these incredibly hard to resist. They’re wonderful alongside coffee, hot chocolate, or a glass of cold milk.

And if you’re making 500 for Christmas, make sure you keep a few aside for yourself before putting them out—because once people start grabbing them, they tend to disappear very quickly!
