Traditional Castella Cake

Step 1: Prepare the Pan

  • Preheat your oven to 160°C (320°F).
  • Line an 8-inch (20 cm) square pan or 8×4-inch loaf pan with parchment paper, leaving extra paper hanging over the sides for easy removal.

Step 2: Warm the Honey

In a small bowl, combine:

  • Honey
  • Warm milk (or warm water)

Stir until smooth and set aside.

Step 3: Beat the Eggs

Crack the eggs into a large mixing bowl.

Add:

  • Sugar
  • Pinch of salt

Using an electric mixer, beat on high speed for 8–10 minutes, until the mixture becomes pale, thick, and triples in volume.

The batter should leave ribbons on the surface when the whisk is lifted.

Step 4: Add the Honey

Pour the honey mixture and vanilla (if using) into the beaten eggs.

Mix gently until just combined.

Step 5: Fold in the Flour

Sift the bread flour over the batter in 2–3 additions.

Using a spatula, gently fold the flour into the batter with slow, sweeping motions.

Do not overmix, or the cake will lose its airy texture.

Step 6: Pour into the Pan

Pour the batter into the prepared pan.

Tap the pan gently on the counter a few times to remove any large air bubbles.

Step 7: Bake

Bake for 45–50 minutes, or until the top is deep golden brown and a toothpick inserted into the center comes out clean.

If the top browns too quickly, loosely cover it with aluminum foil during the last 15 minutes of baking.

Step 8: Cool the Cake

Remove the cake from the oven.

Lift it out of the pan using the parchment paper and place it on a wire rack.

Allow it to cool for about 20 minutes.

Step 9: Wrap for the Best Texture

For the signature soft Castella texture:

  • Wrap the slightly warm cake tightly in plastic wrap.
  • Let it rest at room temperature for 6–12 hours, or overnight.

This helps the cake become extra moist and tender.

Serving Suggestions

  • Slice with a sharp knife into thick rectangles.
  • Serve with hot tea, coffee, or milk.
  • Dust lightly with powdered sugar if desired.
  • Drizzle with a little honey for extra sweetness.
