Tiger Nuts: The Small Underground Tuber With a Surprisingly Versatile Place in the Kitchen

  • by

Most people recognize tiger nuts as small, wrinkled brown pieces that look more like nuts than vegetables. But despite their name, tiger nuts are not actually nuts. They are small underground tubers produced by the plant Cyperus esculentus, commonly known as yellow nutsedge.

For centuries, tiger nuts have been enjoyed as a food in different parts of the world. They have a naturally sweet, slightly nutty flavor and can be eaten dried, soaked, ground into flour, or blended into a creamy drink known as tiger-nut milk.

If you have never prepared them at home, the process is surprisingly simple.

How to Prepare Tiger Nuts Step by Step

Step 1: Clean the Tiger Nuts

Start with dried, food-grade tiger nuts.

Place them in a bowl and remove any pieces that look damaged or spoiled. Rinse the remaining tubers several times under clean running water to remove dust and debris.

Step 2: Soak Them

Dried tiger nuts can be quite hard, so soaking is important.

Place the cleaned tiger nuts in a large bowl and cover them generously with clean water.

Allow them to soak for approximately 12–24 hours, changing the water if necessary.

As they absorb water, they become softer and easier to blend.

Step 3: Rinse Again
