Soft Skillet Flatbreads (Low-Carb Alternative – Not Zero-Carb)

These soft, fluffy flatbreads are a delicious alternative to traditional bread and are perfect for breakfast, sandwiches, or as a side dish. While social media often claims they’re “zero carb” and that you can eat unlimited amounts for weight loss, that’s not accurate. Ingredients like eggs, cheese, and yogurt naturally contain some carbohydrates and calories.

Here’s an easy recipe you can make in minutes.

Ingredients

  • 1 cup (225 g) cottage cheese or Greek yogurt
  • 2 large eggs
  • 1 cup (100 g) shredded mozzarella cheese
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon dried oregano or Italian seasoning (optional)
  • Pinch of salt

Instructions

Step 1: Mix the Wet Ingredients

In a large bowl, combine:

  • Cottage cheese (or Greek yogurt)
  • Eggs

Whisk until smooth.

Step 2: Add the Dry Ingredients

Stir in:

  • Almond flour
  • Baking powder
  • Salt
  • Garlic powder and herbs (if using)

Finally, fold in the shredded mozzarella cheese.

Mix until a soft, thick dough forms.

Step 3: Shape the Flatbreads

Divide the dough into 6 equal portions.

With lightly oiled hands, flatten each portion into a circle about ½ inch (1–1.5 cm) thick.

Step 4: Cook

Heat a non-stick skillet over medium-low heat.
