Roasted Vegetable Tian with Feta and Fresh Herbs

  • by

Step 1: Prepare the Vegetables

Preheat your oven to 200°C (400°F).

Wash the zucchini, eggplant, and tomatoes thoroughly. Slice them into evenly sized rounds, approximately 5 mm thick.

If your eggplant is particularly bitter, sprinkle the slices lightly with salt and let them rest for 15 minutes. Pat dry with paper towels.

Step 2: Prepare the Garlic and Herb Oil

In a small bowl, combine the olive oil, minced garlic, oregano, thyme, paprika, black pepper, and a little salt.

Mix well to create a fragrant seasoning mixture that will coat the vegetables beautifully.

Step 3: Arrange the Vegetables

Lightly grease a round baking dish with olive oil.

Arrange the zucchini, eggplant, tomato, and onion slices in overlapping layers around the dish. Alternate the vegetables to create an attractive pattern.

Pour the garlic and herb oil evenly over the vegetables, making sure the slices are lightly coated.

Step 4: Roast Until Tender

Cover the baking dish loosely with aluminum foil and bake for 25 minutes.

Remove the foil and continue roasting for another 15–20 minutes, or until the vegetables are tender and beginning to caramelize around the edges.

If the vegetables release a lot of liquid, allow a little extra baking time so the excess moisture can evaporate.

Step 5: Add the Feta Cheese

Remove the dish from the oven and sprinkle the crumbled feta cheese over the vegetables.

Return it to the oven for another 5–10 minutes, until the cheese is warmed and the vegetables are beautifully golden.

Step 6: Garnish and Serve

Remove the dish from the oven and allow it to rest for 5 minutes.

Garnish with fresh rosemary and chopped parsley. Drizzle with a little extra virgin olive oil if desired.

Serve warm as a side dish with grilled chicken, roasted fish, or crusty bread. It also makes a delicious vegetarian main course when paired with rice, couscous, or quinoa.

Tips for the Best Roasted Vegetables

  • Slice evenly: Uniform slices help the vegetables cook at the same rate.
  • Avoid overcrowding: Arrange the vegetables snugly but not too tightly, allowing heat to circulate.
  • Choose ripe tomatoes: They add natural sweetness and moisture to the dish.
  • Adjust the cheese: Goat cheese or grated Parmesan can replace feta for a different flavor.
  • Make it heartier: Add thinly sliced potatoes or bell peppers between the vegetables.
  • Get extra color: Broil for 2–3 minutes at the end, watching carefully to prevent burning.

Storage and Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in an oven at 180°C (350°F) for approximately 10–15 minutes, or until heated through. You can also reheat individual portions in the microwave, although the vegetables will be softer.

A Delicious Mediterranean-Inspired Dish

This roasted vegetable tian is a wonderful way to turn simple, everyday vegetables into something special. The sweetness of roasted tomatoes, the tenderness of zucchini and eggplant, the savory garlic, and the creamy, salty feta create a delicious combination in every bite.
