Oatmeal Breakfast Cookies: Soft, Chewy, and Nutritious

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the dry ingredients. In a large bowl, mix the rolled oats, cinnamon, baking soda, and salt.
  3. Add the wet ingredients. Stir in the almond butter, honey, applesauce, and vanilla until everything is well combined.
  4. Fold in the raisins and mix until they are evenly distributed throughout the dough.
  5. Shape the cookies. Scoop portions of the mixture onto the prepared baking sheet. Flatten each one slightly with the back of a spoon, since these cookies won’t spread much while baking.
  6. Bake for about 12–16 minutes, or until the edges are lightly golden and the centers are set.
  7. Cool and enjoy. Let the cookies cool on the baking sheet for a few minutes before transferring them to a rack. They’ll become easier to handle as they cool.

These cookies are delicious for breakfast, a lunchbox treat, or an afternoon snack. For a softer, chewier texture, be careful not to overbake them.
