- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the dry ingredients. In a large bowl, mix the rolled oats, cinnamon, baking soda, and salt.
- Add the wet ingredients. Stir in the almond butter, honey, applesauce, and vanilla until everything is well combined.
- Fold in the raisins and mix until they are evenly distributed throughout the dough.
- Shape the cookies. Scoop portions of the mixture onto the prepared baking sheet. Flatten each one slightly with the back of a spoon, since these cookies won’t spread much while baking.
- Bake for about 12–16 minutes, or until the edges are lightly golden and the centers are set.
- Cool and enjoy. Let the cookies cool on the baking sheet for a few minutes before transferring them to a rack. They’ll become easier to handle as they cool.
These cookies are delicious for breakfast, a lunchbox treat, or an afternoon snack. For a softer, chewier texture, be careful not to overbake them.
