Italian Zabaione (Zabaglione)

1. Separate the eggs
Separate the egg yolks from the whites and place the yolks in a heatproof bowl.

2. Add the sugar
Add the sugar to the egg yolks and whisk vigorously for 2–3 minutes, until the mixture becomes pale, thick, and creamy.

3. Add the Marsala
Slowly whisk in the Marsala wine and vanilla, if using, until everything is well combined.

4. Create a double boiler
Place the bowl over a saucepan containing a small amount of gently simmering water. Make sure the bottom of the bowl doesn’t touch the water.

5. Whisk continuously
Whisk constantly for about 5–8 minutes. The mixture will gradually become thick, pale, and airy.

6. Check the consistency
The Zabaione is ready when it has roughly doubled in volume and falls from the whisk in thick ribbons.

7. Serve immediately
Spoon the warm Zabaione into small glasses or dessert cups.

8. Garnish
Lightly dust the top with cocoa powder. You can also serve it with fresh strawberries, raspberries, peaches, or crisp cookies. 🍓
