Italian Chicken Bake

1. Prepare the chicken

Preheat your oven to 375°F (190°C).

Pat the chicken breasts dry. In a shallow bowl, combine the flour, Italian seasoning, garlic powder, paprika, salt, and pepper.

Coat each chicken breast lightly in the seasoned flour.

2. Brown the chicken

Heat the olive oil and butter in a large oven-safe skillet over medium-high heat.

Add the chicken and cook for about 3–4 minutes per side, until nicely golden. The chicken does not need to be completely cooked through yet.

Transfer it to a plate.

3. Cook the pasta

Bring a large pot of salted water to a boil. Cook the spaghetti until just al dente according to the package directions.

Drain and set aside.

4. Make the creamy sauce

Using the same skillet, add the onion and bell pepper. Cook for 3–4 minutes until softened.

Add the garlic and cook for another 30 seconds.

Pour in the chicken broth and heavy cream. Stir in the Italian seasoning and red pepper flakes.

Simmer for 3–5 minutes.

5. Add the cheese

Reduce the heat to low and stir in the Parmesan until melted and smooth.

Add the cooked spaghetti and toss until thoroughly coated in the sauce.

6. Arrange the chicken

Nestle the browned chicken breasts on top of the pasta.

Sprinkle the mozzarella evenly over the chicken and pasta.

7. Bake

Transfer the skillet to the oven and bake for 20–25 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbling and golden.

8. Garnish and serve

Remove from the oven and let rest for 5 minutes.

Sprinkle with fresh parsley and a little extra Parmesan before serving.
