Irish-Inspired Cheesy Bacon Potato Rounds: An Easy 4-Ingredient Recipe

  • by

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Line a large baking sheet with aluminum foil or parchment paper. Lightly grease the surface to prevent the potatoes from sticking.

Step 2: Prepare the Potatoes

Wash and scrub the potatoes thoroughly. Leave the skin on for a rustic texture and extra crispiness.

Slice each potato into rounds approximately ½ inch thick. Try to keep the slices uniform so they cook evenly.

Place the potato rounds in a large bowl and toss them with olive oil. Add a little salt, black pepper, and garlic powder if desired.

Step 3: Arrange the Potato Slices

Arrange the potato rounds in a single layer on the prepared baking sheet. Leave a little space between each slice to help them roast evenly.

Bake for 20–25 minutes, then carefully flip the potatoes and bake for another 10–15 minutes, or until they are golden on the outside and tender when pierced with a fork.

Step 4: Cook the Bacon

While the potatoes are roasting, cook the bacon in a skillet over medium heat until crispy.

Transfer the cooked bacon to a paper towel-lined plate to drain excess grease. Once cooled slightly, chop it into small pieces.

You can also cook the bacon in the oven on a separate baking sheet.

Step 5: Add the Cheddar Cheese

Remove the potatoes from the oven. Sprinkle a generous amount of shredded cheddar cheese over each potato round.

Return the baking sheet to the oven for approximately 3–5 minutes, or until the cheese has melted completely.

For extra golden cheese, switch to the broiler for the final minute, watching carefully to prevent burning.

Step 6: Add the Crispy Bacon

Remove the potatoes from the oven and immediately sprinkle the crispy bacon pieces over the melted cheddar cheese.

For the best flavor, serve the potato rounds while the cheese is still warm and stretchy.

Step 7: Serve and Enjoy

Transfer the cheesy bacon potato rounds to a serving platter. Garnish with chopped green onions or fresh parsley if desired.

Serve immediately with sour cream, ranch dressing, or your favorite dipping sauce.
