Healthy Oat Pancakes

  • by

These simple oat pancakes are soft, lightly golden, and easy to prepare. They’re made without traditional wheat flour and can be enjoyed for breakfast with fresh fruit, yogurt, or a drizzle of honey.

Note: The “lose 10 lbs in 9 days” claim isn’t something this recipe can guarantee. Weight loss varies from person to person, and very rapid weight loss is generally not a realistic or healthy expectation.

🛒 Ingredients

  • 1 cup rolled oats
  • ½ cup Greek yogurt
  • ¼ cup milk
  • 1 large egg
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • A little oil or cooking spray for the pan

👩‍🍳 Step-by-Step Instructions

1. Blend the oats

Place the rolled oats in a blender or food processor. Blend until they become a fine oat flour.

2. Combine the wet ingredients

In a mixing bowl, whisk together the Greek yogurt, milk, egg, honey, vanilla extract, and lemon zest.

3. Add the dry ingredients

Add the blended oats, baking powder, baking soda, and salt.

Stir until everything is combined and you have a smooth, thick batter.

4. Rest the batter

Let the batter sit for 3–5 minutes. The oats will absorb some of the liquid and the batter will thicken.

If it becomes too thick, add a tablespoon or two of milk.

5. Heat the pan

Place a nonstick skillet or griddle over medium heat and lightly grease it.

6. Cook the pancakes

Pour about ¼ cup of batter onto the hot pan for each pancake.

Cook for approximately 2–3 minutes, until bubbles appear on the surface and the edges begin to look set.

7. Flip

Carefully flip each pancake and cook for another 1–2 minutes, until golden brown and cooked through.

Repeat with the remaining batter.

8. Serve

Stack the warm pancakes and serve with your favorite toppings.

Try fresh berries, sliced banana, Greek yogurt, chopped nuts, cinnamon, or a small drizzle of honey.

⭐ Helpful Tips

  • For thinner pancakes, add a little more milk.
  • Don’t cook over high heat, as the outside can brown before the center is cooked.
  • Letting the batter rest helps create a softer texture.
  • For a completely no-added-sugar version, simply leave out the honey and use fruit for sweetness.

Enjoy these easy oat pancakes for a quick and satisfying breakfast! 🥞✨
