Step 1: Mix the Egg and Yogurt
Crack one egg into a medium-sized mixing bowl. Add the plain yogurt and sugar.
Whisk everything together until the mixture becomes smooth and creamy. Add the vanilla extract and mix again.
Step 2: Add the Dry Ingredients
Add the flour, baking powder, and a pinch of salt to the bowl.
Gently mix until the ingredients are combined and a thick batter forms. Avoid overmixing, as this can make the pancakes less tender.
If the batter is too thick to pipe or spoon easily, add milk one tablespoon at a time until it reaches a thick but manageable consistency.
Step 3: Prepare the Pan
Place a nonstick frying pan or griddle over medium-low heat.
Lightly grease the surface with a little oil or butter. Allow the pan to warm up before adding the batter.
Avoid using high heat, because the outside may brown too quickly before the centers are fully cooked.
Step 4: Shape the Pancakes
Transfer the batter into a piping bag or a clean food-safe plastic bag with a small corner cut off.
Pipe small circles or spiral shapes onto the warm pan. Alternatively, use a spoon to drop small portions of batter onto the surface.
Leave some space between each pancake so you can flip them easily.
Step 5: Cook Until Golden
Cook the pancakes for approximately 2–3 minutes, or until small bubbles begin to appear on the surface and the edges look set.
Carefully flip each pancake with a spatula and cook for another 1–2 minutes.
The pancakes should be golden brown on both sides and cooked through in the center. Adjust the heat if they brown too quickly.
Repeat with the remaining batter, lightly greasing the pan between batches if necessary.
Step 6: Add the Finishing Touches
Transfer the cooked pancakes to a serving plate.
Dust them lightly with powdered sugar for a beautiful finish, just like the pancakes in the photo.
Serve them warm with honey, maple syrup, fruit preserves, fresh strawberries, sliced bananas, or your favorite toppings.
Tips for Perfect Yogurt Pancakes
Use room-temperature ingredients: The egg and yogurt mix more easily when they are not very cold.
Choose plain yogurt: Unsweetened yogurt gives you better control over the sweetness. Greek yogurt also works, although you may need a little extra milk to adjust the batter.
Keep the heat moderate: Medium-low heat helps the pancakes cook evenly without burning.
Do not overmix: Stir only until the flour disappears. A few small lumps are perfectly fine.
Make evenly sized pancakes: Using a piping bag or small spoon helps the pancakes cook at approximately the same rate.
Check the centers: Small, thick pancakes may need a little longer to cook than expected. Make sure the centers are fully cooked before serving.
