Ingredients
- ⅓ cup all-purpose flour
- ¼ teaspoon salt
- ¼ teaspoon dried thyme
- ¼–½ teaspoon freshly ground black pepper
- 2½ cups whole milk
- ½ cup heavy whipping cream
- Buttermilk biscuits, for serving
- Sausage patties, for serving
Step-by-Step Instructions
1. Combine the dry ingredients
In a small bowl, whisk together the flour, salt, dried thyme, and black pepper. Set aside.
2. Warm the milk and cream
Pour the whole milk and heavy cream into a saucepan. Heat over medium-low heat until warm, but do not bring it to a full boil.
3. Add the flour mixture
Gradually sprinkle the flour mixture into the warm milk while whisking constantly. Keep whisking to prevent lumps from forming.
4. Cook until thickened
Continue cooking over medium heat, stirring frequently, until the gravy becomes smooth, creamy, and thick enough to coat the back of a spoon, about 5–8 minutes.
5. Adjust the seasoning
Taste the gravy and add a little more salt or black pepper if needed. If it becomes too thick, whisk in a small splash of milk.
6. Serve
Split warm buttermilk biscuits in half and spoon the hot milk gravy generously over them. Serve alongside crispy sausage patties for a classic Southern-style breakfast.
⭐ Tip
For the smoothest gravy, add the flour gradually and whisk continuously as it cooks. This helps prevent lumps and gives the gravy its silky texture.
