Classic No-Bake Blueberry Cheesecake

Combine the graham cracker crumbs, melted butter, and sugar in a bowl.

Stir until the crumbs are evenly moistened.

Press the mixture firmly into the bottom of a 9 × 13-inch baking dish.

Refrigerate for about 20–30 minutes while preparing the filling.

Step 2: Prepare the Creamy Filling

Beat the softened cream cheese until smooth.

Add the powdered sugar and vanilla and continue mixing until creamy and lump-free.

In a separate bowl, whip the heavy cream with the remaining powdered sugar until stiff peaks form.

Gently fold the whipped cream into the cream cheese mixture until light and fluffy.

Step 3: Add the Cheesecake Layer

Spread the cream cheese mixture evenly over the chilled graham cracker crust.

Smooth the surface with a spatula.

Return the dish to the refrigerator while you prepare the blueberry topping.

Step 4: Make the Blueberry Topping

Place the blueberries, sugar, and lemon juice in a saucepan over medium heat.

In a small bowl, whisk together the cornstarch and water until smooth.

Pour the cornstarch mixture into the blueberries and stir gently.

Cook for several minutes, stirring occasionally, until the berries soften and the mixture thickens into a glossy sauce.

Remove from the heat and stir in the vanilla.

Step 5: Cool the Blueberries

Allow the blueberry topping to cool completely.

This step is important—don’t pour hot blueberry sauce directly over the cheesecake layer, or it can soften the filling.

Once cooled, spoon the blueberry mixture evenly over the cheesecake layer.

Step 6: Chill

Cover the dish and refrigerate for at least 4–6 hours, preferably overnight.

The longer it chills, the firmer and easier to slice it will become.

Step 7: Serve

Cut into squares and serve cold.

The combination of the crunchy buttery crust, smooth cheesecake filling, and juicy blueberry topping makes every bite irresistible.

For an extra-special presentation, add a little whipped cream and a few fresh blueberries just before serving.
