3. Strain

Let drain 10–20 minutes (longer = thicker ricotta).
4. Serve or store
Use immediately or refrigerate in an airtight container up to 4–5 days.
Tips
Use whole milk only (low-fat won’t work well)

1 gallon whole milk
¾ cup white vinegar or lemon juice
1 tsp salt

Instructions
1. Heat the milk

2. Add acid
